Salmon and South Beach

Today, I began my first day of the South Beach Diet. I tried the diet in college and lost 22lbs in 2 weeks - great results. I had tons of energy, felt great, and lost all my stomach fat. As the years went on, with work and a sedentary lifestyle my stomach came back. That and I did a lot of eating out. Its back to the beach!

For dinner I had Balsamic Glazed Salmon. It was great! The sauce really kicked it up a notch and was amazingly easy to do. The entire recipe took about 15 minutes to make. ( Prep time included. ) I also wondered when you knew salmon had been cooked thoroughly. This blog entry Is it done? was great information and illustrated what to look for.
